Championship Chili
- 2 lb. ground beef
- 2 pkg. chili mix
- 2 Tbsp. sugar
- 1 tsp. red pepper
- 1 large onion, finely chopped
- 3 tsp. green chilies
- 1 small clove garlic, minced
- 1 large rib celery, chopped
- 1 (16 oz.) can pinto beans
- 1 lb. beef stew chunks
- 1 (14 oz.) can tomatoes
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 3 Tbsp. chili powder
- 1 bay leaf
- 1 1/4 c. water
- salt and pepper to taste
- 1 (16 oz.) can kidney beans
- Brown stew meat and
- ground
- beef; drain.
- Mix the rest of the ingredients, except beans,tnd
- add to ground beef and beef chunks.
- Cut tomatoes verytine.
- Simmer
- for 1 hour and then add beans; simmer for
- 2
- or
- more hours, (the longer the better). Remove the bay leaf before serving.
