Avocado Patties
- 1 avocado ripe
- 1 onions chopped
- 1 garlic cloves minced
- 3 tablespoons fresh coriander chopped
- 1 teaspoon coriander powder
- 1 teaspoon ground cumin
- 2 tablespoons all-purpose flour
- 1 small eggs
- salt
- ground black pepper
- olive oil for frying
- Cut the avocado in half, and remove seed.
- With a spoon, remove all the pulp. Place the avocado in a bowl, and mash with a fork.
- Add the remaining ingredients, and mix well.
- Heat a skillet with a little olive oil (not much is needed).
- When hot, add spoonfuls of avocado batter, and fry on both sides.
- If the dough is too runny, add a little more flour, it depends on the size of the egg and avocado used.
- Serve hot with steamed vegetables, a green salad, or a soup.
