Avocado Patties

  1. Cut the avocado in half, and remove seed.
  2. With a spoon, remove all the pulp. Place the avocado in a bowl, and mash with a fork.
  3. Add the remaining ingredients, and mix well.
  4. Heat a skillet with a little olive oil (not much is needed).
  5. When hot, add spoonfuls of avocado batter, and fry on both sides.
  6. If the dough is too runny, add a little more flour, it depends on the size of the egg and avocado used.
  7. Serve hot with steamed vegetables, a green salad, or a soup.
