Stuffed Grape Leaves
- 1 clove garlic
- 1 lb. fresh tender grape leaves
- 4 c. meat and rice stuffing (see stuffing recipe)
- 1 1/2 tsp. salt
- 1/2 c. lemon juice
- 1 tsp. dried mint
- water as needed
- Soften leaves by dipping a few at a time in boiling water. One leaf at a time, lay it down with the rough side up and plac a teaspoon of stuffing in the center.
- Fold bottom of leaf over the stuffing, then fold it from each side to the middle.
- Roll tightly, forming a roll about 3 to 4 inches long and 1/2 to 1 inch long.
- Pack rolls, open ends down, in tight rows and layer on a steamer rack in saucepan.
- Sprinkle each layer with salt and lemon juice.
- Crush garlic.
- Mix with remaining lemon juice and pour over the last layer or rolls.
- Simmer in steamer for about 1 1/2 hours or until leaves and stuffing are tender.
