Sourdough Blinis
- 1 cup milk
- 3/4 tablespoon yeast
- 3 11/16 cups sourdough starter
- 2/3 cup flour
- 9/16 cup buckwheat flour or 60 gr. if sugar was used
- 1 teaspoon agave or 1 1/2 tsps. sugar
- 2 eggs
- 1/2 teaspoon salt
- Heat the milk and add the yeast, stirring until it dissolves completely. Add the sourdough starter and mix well. Add the flour and buckwheat flour along with the agave.
- Cover the batter and allow to rise until doubled in volume and bubbly, approximately 1 to 1 1/2 hours.
- Separate the eggs and add the yolks to the batter. Set aside for 1 hour.
- Beat the egg whites to form stiff peaks and fold into the batter.
- Heat a flat skillet and melt 1/2 tablespoon of butter. Ladle the batter onto the skillet, creating small rounds. Let cook for a few seconds on one side before flipping, then wait a few seconds more and removing from the pan.
- Keep warm until serving.
