Sourdough Blinis

  1. Heat the milk and add the yeast, stirring until it dissolves completely. Add the sourdough starter and mix well. Add the flour and buckwheat flour along with the agave.
  2. Cover the batter and allow to rise until doubled in volume and bubbly, approximately 1 to 1 1/2 hours.
  3. Separate the eggs and add the yolks to the batter. Set aside for 1 hour.
  4. Beat the egg whites to form stiff peaks and fold into the batter.
  5. Heat a flat skillet and melt 1/2 tablespoon of butter. Ladle the batter onto the skillet, creating small rounds. Let cook for a few seconds on one side before flipping, then wait a few seconds more and removing from the pan.
  6. Keep warm until serving.
