Zhai Choy With Fermented Tofu

  1. Fry dried bean curd pieces in oil until golden brown and crispy.
  2. Soften fried bean curd pieces in a bowl of water.
  3. Pour oil away and using the same pan, lightly fry chopped garlic until fragrant at low heat.
  4. Soften fermented tofu with fork and add to the pan.
  5. Add water and allow it to boil. Water must be enough to cover all the ingredients.
  6. Once gravy boils, add shiitake mushrooms, black fungus, dried lily buds and dried bean curd pieces (broken into smaller pieces).
  7. Add black soy sauce.
  8. Once gravy boils again, add carrots, glass noodles and chinese cabbage.
  9. Add sugar to taste.
  10. Add salt or another cube of fermented tofu.
  11. Let the dish simmer until all ingredients soften.
