Breakfast Almond Butter & Banana Stuffed French Toast
- 2 slices whole wheat bread
- 1 banana small or medium sized, sliced
- 2 tablespoons almond butter
- 1 medium egg
- cinnamon
- 1 tablespoon vanilla extract or 1 fresh vanilla pod
- Cut the crusts off the bread (This step is of course optional, I enjoy the crusts personally).
- Begin to spread the almond butter on each slice of bread.
- Place the banana slices on one slice of bread and put the other slice of bread on top to form a sandwich. Pinch round all the sides to close/seal the edges.
- Whisk together the egg, vanilla & cinnamon.
- Dip the sandwich in the egg mixture until each side is coated.
- Add to a hot pan that contains a small amount of coconut oil (or something similar, for example; olive oil, a nob of butter...) and cook for 90 seconds each side.
- Then, serve! This can be enjoyed hot at the table or room temperature on the go.
