Vegan Chick'N-Pea Salad
- 14 ounces chickpeas garbanzo beans
- 1/2 cup Vegenaise
- 2 tablespoons celery sliced thin
- 2 tablespoons green onion white part, sliced thin
- 1 tablespoon green bell pepper chopped small
- 1 1/2 teaspoons dijon mustard
- 1/4 teaspoon crushed red pepper flakes optional for spice
- salt
- pepper
- Rinse and drain your can of chick peas, then empty them into a medium sized bowl. With a fork, mash them all until they are completely mashed but still have texture.
- Add your Vegenaise, dijon mustard and crushed red pepper flakes and stir together evenly.
- Chop all of your veggies pretty small, measure and add to mixture.
- Stir everything together well, add your salt and pepper to taste, then serve.
- Mixture goes well on a sandwich, with crackers or a baguette.
