Vegan Chick'N-Pea Salad

  1. Rinse and drain your can of chick peas, then empty them into a medium sized bowl. With a fork, mash them all until they are completely mashed but still have texture.
  2. Add your Vegenaise, dijon mustard and crushed red pepper flakes and stir together evenly.
  3. Chop all of your veggies pretty small, measure and add to mixture.
  4. Stir everything together well, add your salt and pepper to taste, then serve.
  5. Mixture goes well on a sandwich, with crackers or a baguette.
