Guacamole Superior - Mexico
- 4 ripe avocados
- 2 Tbsp. fresh lemon juice
- 2 scallions, chopped
- 2 large garlic cloves, minced
- 2 jalapeno peppers, seeded and minced
- 1 tomato, peeled, seeded and chopped
- 2 Tbsp. grated jicama
- 1 Tbsp. sour cream
- 1/2 c. medium-hot salsa
- 1 Tbsp. Worcestershire sauce
- 2 Tbsp. minced coriander
- 1 Tbsp. olive oil
- 1 Tbsp. white wine vinegar
- 2 tsp. ground cumin
- 2 tsp. chili powder
- 1/4 c. grated Monterey Jack
- 1/4 c. minced skinned chorizo
- 2 Tbsp. tequila
- salt and pepper to taste
- Peel avocados and mash them coarse.
- Add all of the remaining ingredients and stir until combined.
- Serve with tortilla chips.
