Shrimp, Avocado And Grapefruit Salad
- 1/2 c. olive oil
- 1/2 c. lemon juice
- 2 Tbsp. red wine vinegar
- 2 tsp. capers
- 1 tsp. salt
- 1/2 tsp. dill seed
- 1/2 tsp. dry mustard
- Dash of red pepper
- 1 lb. fresh cooked shrimp
- 3 or 4 ripe avocados
- 2 or 3 pink grapefruit
- 1 head of lettuce
- Combine first 8 ingredients in a large bowl; stir in peeled and deveined shrimp.
- Cover and chill several hours or overnight. Drain shrimp; reserving marinade sauce to be use as salad dressing.
- Make individual salads by placing large leaf on salad plate; cut remaining lettuce in strips and place on top of leaf. Arrange shrimp in center; alternate slices of avocados and pink grapefruit around shrimp.
- Used reserved marinade sauce as dressing.
