Effortless Veggie Tofu Scramble
- 14 ounces extra firm tofu
- 2 cups spinach packed
- 1 onion chopped
- 3 garlic cloves minced
- 2 tablespoons water
- 2 tablespoons nutritional yeast
- 1 tablespoon coconut oil
- 1/2 sweet red pepper chopped
- 1/2 teaspoon thyme
- 1/2 teaspoon rosemary
- 1/2 teaspoon marjoram
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
- salt
- On medium heat, in a medium sized pan, heat coconut oil until melted.
- When melted, add onion, garlic, and sweet red pepper. Cook for 7 minutes or until caramelized.
- Now, add nutritional yeast and spiced. Except for salt.
- Cook/sizzle mixture for 5 minutes.
- Add tofu with hands, crumbling it over the pan.
- Mix well with a spatula for 5 minutes, while diminish large pieces of tofu into smaller ones.
- Add water, mix the mixture.
- Lastly, add the spinach and salt. Cook for 5 minutes. Enjoy!
