Shrimp And Grits(Delicious)
- 1 c. hominy grits
- 1 tsp. salt
- 1 tsp. butter
- 1/2 c. grated Cheddar cheese
- 1/4 tsp. nutmeg
- 1/2 tsp. white pepper
- 1 clove garlic, minced
- 3 slices bacon, diced
- 1 lb. shrimp, peeled and deveined
- 2 c. sliced mushrooms
- 1 c. finely sliced scallions
- 1 tsp. lemon juice
- 2 Tbsp. chopped parsley
- salt and black pepper to taste
- Cook grits slowly according to directions until only bubble breaks surface now and then, about 40 minutes.
- Stir often; add water if needed.
- Stir in butter and cheese.
- Season to taste with hot pepper sauce, nutmeg and white pepper.
- Cover and hold in a warm place, top of double boiler over simmering water.
- Saute bacon lightly, until edges are brown, not crisp.
