Quince Cake

  1. Preheat the oven to 180 degrees Celsius.
  2. Grease a round pan with margarine and flour.
  3. Begin chopping the quince by using a food processor or even a blender (in this case add a little of the recipe's olive oil).
  4. Set aside.
  5. Add the eggs and the sugar and beat well until it becomes a fluffy mixture.
  6. Add the quince, the cinnamon, the fennel and the olive oil and mix again.
  7. Finally add the flour and the baking powder.
  8. Stir without beating until it becomes a homogeneous batter.
  9. Place the dough in the pan and sprinkle with coarsely ground nuts.
  10. Bake for 30 minutes.
  11. Insert a toothpick, if it comes out clean remove and unmold.
