Quince Cake
- 2 9/16 cups flour
- 1 teaspoon baking powder
- 4 eggs
- 1 3/8 cups brown sugar
- 2/3 cup olive oil
- 1 quince
- 1 teaspoon cinnamon powder
- 1 teaspoon ground fennel
- chopped nuts for decorating
- Preheat the oven to 180 degrees Celsius.
- Grease a round pan with margarine and flour.
- Begin chopping the quince by using a food processor or even a blender (in this case add a little of the recipe's olive oil).
- Set aside.
- Add the eggs and the sugar and beat well until it becomes a fluffy mixture.
- Add the quince, the cinnamon, the fennel and the olive oil and mix again.
- Finally add the flour and the baking powder.
- Stir without beating until it becomes a homogeneous batter.
- Place the dough in the pan and sprinkle with coarsely ground nuts.
- Bake for 30 minutes.
- Insert a toothpick, if it comes out clean remove and unmold.
