Mexican Lasagna
- 1 lb. turkey
- 1/2 chopped onion
- 2 Tbsp. taco seasoning
- 1 1/2 c. tomato sauce
- 16 oz. mild picante sauce
- 1 c. low-fat cottage cheese
- 3 eggs
- 4 oz. chopped chilies
- 6 oz. shredded Monterey Jack cheese
- 4 oz. Mozzarella cheese, shredded
- 8 corn tortillas
- Brown turkey and onion. Add sauces and simmer for 10 minutes. Combine the cottage cheese, eggs and chopped chilies. Have ready the Monterey Jack cheese, Mozzarella cheese and tortillas. In a 9 x 13-inch pan, layer 1/2 of meat mixture, 4 tortillas, 1/2 of cottage cheese mixture and 1/2 of shredded cheeses; repeat. Bake at 350u0b0 for 20 to 25 minutes. Let sit for about 15 minutes before cutting.
