Beef Stir-Fry
- 1 lb. sirloin tip, cut into 1-inch cubes
- 1 Tbsp. dry sherry
- 1 Tbsp. soy sauce
- 1 Tbsp. cornstarch
- 1/2 tsp. sugar
- 2 Tbsp. + 1/2 tsp. vegetable oil
- 1/8 tsp. pepper
- 2 cloves pressed garlic
- 1 Tbsp. oyster sauce
- 2 large stalks broccoli (florets)
- 2 carrots, sliced diagonally
- 1/2 c. beef broth
- 1/2 (15 oz.) can corn, spears, baby
- 20 fresh snow peas
- 1 chopped scallion
- Marinate sirloin in 1 teaspoon cornstarch, sherry, soy sauce, sugar, 1/2 teaspoon oil, pepper and garlic for 1 hour.
- Heat in remaining oil in wok on high.
- Stir-fry meat.
- Remove.
- Mix remaining starch with oyster sauce.
- Stir-fry broccoli and carrots for 30 seconds; add broth.
- Cover wok and steam for 1 minute or until vegetables are tender but retain crunch.
- Add corn, peas, scallion, beef and sauce mix.
- Heat until clear and thickened. Makes 4 servings.
