Shrimp Scampi With Linguini
- 1 pound linguini
- 4 tablespoons butter
- 4 tablespoons EVOO plus more for drizzling
- 2 shallots finely diced
- 2 cloves garlic minced
- 1 pinch red pepper flakes optional
- 1 pound shrimp peeled and deveined
- ground black pepper
- 1/2 cup dry white wine
- 1 lemon
- 1/4 cup chopped parsley finely
- For the pasta, bring water to a boil in a large pot. Add few tbsp salt and linguini. Cover and cook, 6-8 minutes. Drain.
- Meanwhile, in a large skillet, melt 2 tbsp butter in 2 tbsp EVOO over medium-high heat. Saute the shallots, garlic, and red pepper flakes until the shallots are translucent, about 3-4 minutes. Season the shrimp with salt and pepper and add them to the pan and cook until they turn pink, 2-3 minutes. Remove the shrimp, set aside and keep warm. Add wine and lemon juice and bring to a boil. Add 2 tbsp butter and 2 tbsp oil. When the butter has melted, return shrimp to the pan along with parsley and cooked pasta. Stir well and season with salt and pepper. Drizzle with more oil and serve immediately.
