Mushroom Crostini With Fromage Fort
- 1/3 cup sour cream
- 4 ounces gruyere cheese grated
- 4 ounces white cheddar sheese, grated
- 2 tablespoons butter soft
- 1/4 cup dry white wine
- 1 garlic clove
- 1 pinch kosher salt
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 ounce dried mushrooms
- 2 tablespoons white onion chopped
- 1/4 cup dry white wine
- 1 lemon
- 1 tablespoon thyme leaves
- 1 tablespoon parsley chopped, and more for garnish
- salt
- 1/2 inch EVOO
- Place the first 7 ingredients in a food processor and puree until smooth, 1 min.
- Place in a small bowl and keep at room temperature
- Place butter and olive oil in a large skillet on medium high temperature
- Add mushrooms and stir until browned, 3 to 4 mins
- Add onion and soften, 2 mins
- Add wine and lemon juice, thyme and parsley, stir and cook until the liquid has evaporated
- lightly salt and pepper
- Coat toasted baguettes with the cheese spread, add mushrooms and garnish with chopped parsly
