San Choy Bow
- 1 tablespoon peanut oil
- 1 teaspoon ginger finely chopped
- 1 clove garlic crushed
- 1 pound ground pork
- 6 scallions finely sliced, plus extra for garnish
- 1 1/2 ounces ham chopped
- 1 3/4 ounces mushrooms chopped
- 1 3/4 ounces bamboo shoots
- 1 ounce bean sprouts
- 2 tablespoons dry sherry
- 1 tablespoon soy sauce plus extra to serve
- 1 tablespoon oyster sauce
- 8 leaves iceberg lettuce
- 1 red chili sliced, optional
- Heat oil in a large frying pan on high. Saute ginger and garlic for 30 seconds, or until fragrant.
- Add pork and brown for 4-5 mins, breaking up the lumps with the back of a spoon as it cooks.
- Stir in scallions, ham, mushrooms, bamboo shoots and bean sprouts. Cook, stirring, for 3-4 mins.
- Stir in sherry and sauces. Spoon into lettuce leaves and sprinkled with extra scallion. Serve with extra soy sauce and sliced chili (if using).
