Slow Cooker Meatloaf
- 40 ounces lean ground beef or chopped steak
- 1 cup onions caramelized
- 1 green pepper
- 3 eggs
- 1 cup breadcrumbs
- 1 tablespoon kosher salt
- 1/2 tablespoon black pepper ground
- 1/2 cup yellow mustard
- 1 cup ketchup
- 8 ounces Crystal Farms Shredded Swiss Cheese
- 2 cups mushrooms sliced
- In a large mixing bowl, combine ground beef, caramelized onions, peppers, eggs, breadcrumbs, salt and pepper. Mix well.
- In a separate bowl, combine mustard and ketchup. Add half of mixture to the beef mix and reserve other half.
- Add half of the beef mixture to the crock pot, leaving a gap in the middle like a boat. Fill this gap with shredded Swiss cheese, and top with the remaining beef mixture.
- Add mushrooms around the sides and over the top of the meatloaf in the slow cooker.
- Cook meatloaf on high for 2 1/2-3 hours until internal temperature reaches 165u0b0 F.
- Turn to low and top with remaining ketchup mix. Let the meatloaf cook for another hour to slightly caramelize the glaze.
