Black Bean Mix
- 1 9/16 cups black beans boiled
- 1 red onion
- 2 tomatoes
- 1 red bell pepper
- 1 cayenne pepper or less, according to taste
- 2 cloves garlic
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 jalapeno pepper optional
- 2 tablespoons cilantro leaves
- 2 tablespoons olive oil
- Chop the vegetables small, keeping onion separated.
- Mix the boiled black beans, chopped bell pepper, garlic and tomatoes in a bowl. Add cumin, salt, cayenne pepper and jalapeno (if using).
- Saute the red onion on a skillet with olive oil for 2-3 minutes.
- Add the mixture of beans and vegetables to the skillet. Reduce heat to low and simmer for 10-15 minutes or until vegetables are suitably cooked.
- Sprinkle cilantro leaves on top.
