Black Bean Mix

  1. Chop the vegetables small, keeping onion separated.
  2. Mix the boiled black beans, chopped bell pepper, garlic and tomatoes in a bowl. Add cumin, salt, cayenne pepper and jalapeno (if using).
  3. Saute the red onion on a skillet with olive oil for 2-3 minutes.
  4. Add the mixture of beans and vegetables to the skillet. Reduce heat to low and simmer for 10-15 minutes or until vegetables are suitably cooked.
  5. Sprinkle cilantro leaves on top.
