Palak Panner

  1. 1st step - Blanch the spinach in boiling water for 2 minutes and then run it under cold water for 30 seconds. Then blend the spinach in a paste, do not add extra water to the paste at this stage.
  2. 2nd step - make the onion paste with, ginger, garlic, black pepper, cinnamon, clove and green chillies and set aside
  3. In a pan heat 2 tablespoons of oil and add the onion paste and cook until brown (this might take about 4- 5 minutes on medium heat)
  4. Then add the spinach paste and stir well. Add salt and reduce the flame to low.
  5. Then add 1 tablespoon yogurt and mix well.
  6. Stir in the diced panner and cook for 2 minutes or until soft.
  7. Serve hot with rice or chapatti!
