Palak Panner
- 1 large packet of spinach leave
- 1 bowl ground masala (1 onion, 2 inches ginger, 4 garlic cloves, 2 seeds of black pepper, 1,2 inch cinnamon stick, 2 cloves and 2 green chillies)
- 100 g paneer (cottage cheese)
- 1 tbsp yougurt
- Salt to taste
- Oil
- Water
- 1st step - Blanch the spinach in boiling water for 2 minutes and then run it under cold water for 30 seconds. Then blend the spinach in a paste, do not add extra water to the paste at this stage.
- 2nd step - make the onion paste with, ginger, garlic, black pepper, cinnamon, clove and green chillies and set aside
- In a pan heat 2 tablespoons of oil and add the onion paste and cook until brown (this might take about 4- 5 minutes on medium heat)
- Then add the spinach paste and stir well. Add salt and reduce the flame to low.
- Then add 1 tablespoon yogurt and mix well.
- Stir in the diced panner and cook for 2 minutes or until soft.
- Serve hot with rice or chapatti!
