Macaroni And Blue Cheese With Salmon, Asparagus And Tomatoes
- 1 bunch asparagus trimmed, chopped
- 1/4 cup cherry tomatoes quartered
- 3 slices bacon finely sliced
- 2 tablespoons chopped parsley
- 3/4 cup cheddar cheese grated
- 2 cups milk
- 2 tablespoons butter
- 1/3 cup all purpose flour
- 2 cups macaroni cooked
- 6 ounces salmon in oil, drained, flaked
- 3 1/3 ounces blue cheese creamy, crumbled
- Preheat the oven to 350u0b0F. Lightly grease four 8-oz (1-cup) ramekins.
- For the baked macaroni and salmon, heat milk in a saucepan on medium. Bring to boil, then remove from heat.
- Melt butter in a large saucepan on medium. Add flour and cook, stirring, 1 min. Remove from heat. Gradually add milk, stirring constantly until smooth. Return to heat. Cook, stirring, until sauce boils and thickens. Reduce heat to low and simmer 3 mins.
- Stir macaroni, salmon, and cheese into sauce. Divide mixture among ramekins.
- To make topping: in a small bowl, toss together the asparagus, tomatoes, parsley, bacon, and cheese.
- Spoon topping over each ramekin to cover. Bake 15-10 mins, until melted and bubbling. Serve with salad if desired.
