Cod Fish Rice
- 400 grams cod already soaked and separated in small slices
- 1/2 onion small
- 3 garlic cloves
- 1/2 red pepper
- 1/4 savoy cabbage
- olive oil as needed
- 2 cups rice
- 3 tablespoons tomato paste
- 5 coriander branches
- salt as needed
- In a pan with boiling water, add the cod and cook for 3 to 4 minutes.
- Remove the cod, and save the water.
- In a saucepan, stew the onion, garlic, pepper, and cabbage.
- Sprinkle with olive oil, and let cook until the onion is transparent.
- Add the rice, and fry for 1 or 2 minutes.
- Add the water saved from cooking the cod, which should be boiling, the tomato pulp, and bring to a boil.
- When the rice is almost ready, add the cod, and mix.
- Garnish with coriander leaves.
- Serve immediately.
