Pork Scallopine & Juniper Berries
- 6 pork escalopes, trimmed
- 1 tablespoon balsamic vinegar
- 1 tablespoon salted butter
- 1 tablespoon olive oil
- 6 cloves garlic cut in half
- 1/4 cup cream sherry
- 3 sprigs rosemary
- 15 juniper berries crushed lightly
- Boil the cloves of garlic for 5 minutes to soften; drain & set aside
- Brush the pork with some of the balsamic vinegar; salt and pepper
- Melt the butter and olive oil in a large pan on medium heat
- Add the pork, sear until brown, about 3 minutes, turn over, cook 1 minute
- Add the sherry, remaining balsamic, rosemary sprigs, garlic, and juniper
- Simmer for 2 minutes, remove pork, and simmer till slightly thickened
- Spoon sauce over pork, serve with noodles and beans
