Sweet Chili Chicken

  1. Preheat oven to 450 degrees.
  2. Season chicken with salt and pepper.
  3. Heat 1 tablespoon oil in a cast iron skillet on high heat.
  4. Heat to the smoking point but not smoking.
  5. Arrange chicken thighs skin side down.
  6. Cook for 2 minutes and reduce heat to medium high.
  7. Cook for another 12 minutes.ninish Cooking
  8. Transfer chicken to a bowl and coat well with the sweet chili sauce. Let sit for 5 - 10 minutes.
  9. Return chicken to cast iron skillet skin side up and cook for 20 - 25 minutes.
  10. Brush the marinade on the chicken one more time.
  11. Bake for 15 minutes.
  12. Let rest for a few minutes and garnish with the lemons and cilantro.
  13. Serve and enjoy!
