Snooty Squash
- 2 c. squash, cut into chunks (do not peel; mix zucchini and yellow for color)
- 1/2 c. onion chunks
- 1/2 c. green pepper chunks
- 1 1/2 c. smoked sausage (Hillshire), cut into 1/4-inch rounds
- 1/2 tsp. garlic salt
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. oregano flakes
- 2 Tbsp. margarine
- 2 c. diced potatoes
- 2 medium tomatoes, peeled, seeded, chopped
- Melt margarine in saute pan or skillet.
- Add all ingredients except potatoes and tomatoes.
- Boil diced potato while squash simmers.
- Turn squash frequently after 7 or 8 minutes.
- Drain potatoes and add with tomatoes to squash mixture.
- Mix together and simmer 2 or 3 minutes to blend flavors.
- Serve immediately as single dish meal with heated garlic or French bread.
- (Cornbread ain't bad either.)
