Snooty Squash

  1. Melt margarine in saute pan or skillet.
  2. Add all ingredients except potatoes and tomatoes.
  3. Boil diced potato while squash simmers.
  4. Turn squash frequently after 7 or 8 minutes.
  5. Drain potatoes and add with tomatoes to squash mixture.
  6. Mix together and simmer 2 or 3 minutes to blend flavors.
  7. Serve immediately as single dish meal with heated garlic or French bread.
  8. (Cornbread ain't bad either.)
