My Best Blueberry Or Strawberry / Rhubarb Muffins
- 4 teaspoons unsalted butter
- 2 teaspoons flour
- 4 tablespoons cane sugar
- cinnamon
- 1 1/8 cups cream
- 3 eggs
- 4 3/8 tablespoons sunflower oil
- 1 tablespoon vanilla extract
- 3/4 cup cane sugar
- 2 9/16 cups white flour
- 3 teaspoons baking powder
- 1 cup strawberries finely chopped
- 5/8 cup rhubarb
- 5/8 cup rhubarb
- 1 1/2 cups fresh blueberries
- Preheat the oven to 420F
- Prepare the streusel in a large bowl by mixing the butter, sugar, and flour. Then, use your fingertips to crumble until you have a thick sand-like mixture. Set aside.
- For the dough, in a bowl, mix the cream and eggs.
- Add the oil and vanilla extract.
- Gradually, add the sugar, flour, and yeast.
- Stir well after adding each ingredient.
- Gently mix in the fruit.
- Pour into muffin molds, filling them 2/3 full.
- Top with the streusel mixture.
- Bake for 15 to 20 minutes, until well browned.
- Cool before serving.
