Vegetable Biryani
- 2 cups basmati rice
- 1 cup vegetables steamed, green -peas,beans,carrots, cauliflowerr etc
- 2 onions medium sized, chopped
- 2 tablespoons raisins
- 2 tablespoons cashew nuts or slivered -almonds
- 1 teaspoon salt
- 1 teaspoon turmeric powder
- 1 teaspoon cinnamon powder
- 1/4 teaspoon clove powder
- 1/4 teaspoon nutmeg powder
- 1/4 teaspoon chilli powder
- 1/4 teaspoon coriander powder
- 3 tablespoons butter
- Preheat the oven to 375F. Soak the basmati rice in water for 30 min and drain well.
- Melt 1 1/2 Tbsp butter in a skillet and saute' the onions and raisins and cashew nuts till they turn golden brown.Set aside.
- Melt rest of the butter in the skillet and add basmati rice and fry till they don't stick together.
- Add all the spices and mix well.
- Empty the basmati rice into a baking pan add salt and 1 1/2 cup of water.
- Bake for 20 min or until the rice is done. Add the vegetables, onions, raisins and cashew nuts to rice and mix well.
