Souvlaki With Greek Salad
- 1 cucumber 1/2 coarsely grated, 1/2 cut into small chunks
- 2 cloves garlic peeled and minced
- 3/4 cup Greek-style yogurt
- 1/2 pound tomatoes chopped
- 1/4 pound black olives green and, pitted
- 1/2 pound feta cheese cubed
- 2 onions peeled, 1 diced, 1 cut into chunks
- 1 red bell pepper deseeded, 1/2 diced, 1/2 cut into chunks
- 2 tablespoons white wine vinegar
- 3 tablespoons olive oil
- 1 1/4 pounds pork leg lean, boneless, cut into chunks
- 1 yellow bell pepper deseeded and cut into chunks
- 1 green bell pepper deseeded and cut into chunks
- To make the tzatziki sauce, mix the grated cucumber, garlic and yogurt and season. Cover and chill in the fridge.
- To make the salad, mix the remaining cucumber, tomatoes, olives, feta, diced onion and diced red bell pepper. Toss with the vinegar and 1 tbsp oil. Season to taste, cover and set aside.
- For the souvlaki, thread the pork, remaining onion and bell peppers onto skewers. Season well.
- Heat the remaining oil in a large frying pan and sear the skewers for 8-10 mins, turning frequently, until the pork is cooked through and lightly charred in places. Serve with the salad and tzatziki.
