Pat Bittinger'S Applesauce Cake
- 1 c. butter or margarine
- 2 c. sugar
- 2 eggs
- 3 c. flour
- 1 1/2 tsp. nutmeg
- 1 Tbsp. cinnamon
- 1 tsp. ground cloves
- 1/2 tsp. salt
- 1 Tbsp. baking soda
- 2 1/2 c. thick applesauce
- 1 c. chopped nuts
- 1 c. raisins
- 2 Tbsp. light Karo syrup
- Preheat oven to 300u0b0.
- Grease a 9-inch tube pan. Cream the butter and sugar. Add eggs.
- Sift dry ingredients together.
- Add applesauce and Karo syrup to butter-sugar mixture.
- Dredge nuts and raisins with a little flour. Add flour mixture to butter-sugar. Add nuts and raisins.
- Bake for 1 1/2 hours. Do not open oven door during the first hour.
- Cake will double in size during baking and turn very dark.
- Let cake cool in pan.
- Invert when cool.
- Cake tastes better 2 or 3 days after baking.
