Fresh Apple Cake
- 2 c. sugar
- 1 c. vegetable oil
- 3 eggs
- 2 tsp. vanilla extract
- 3 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 2 tsp. apple pie spice
- 2 c. peeled and coarsely chopped apples
- 1 1/4 c. pecans, chopped
- Combine sugar, oil, eggs and vanilla in a large mixing bowl; beat about 1 minute at medium speed of electric mixer.
- Combine flour, soda, salt and apple pie spice; gradually add to sugar mixture, beating at low speed of electric mixer until blended. Stir apples and pecans into batter.
- (Resembles cookie dough.) Spoon batter into greased and floured Bundt pan.
- Bake at 325u0b0 for 1 hour and 30 minutes or until a toothpick inserted in center and comes out clean.
- Cool in pan 15 minutes before removing.
