Arepas With Black Beans
- 1 1/2 cups arepa flour
- 1 cup shredded mozzarella cheese
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 1/2 cups milk
- 1/4 stick Crisco Baking Sticks All-Vegetable Shortening OR 1/4 cup Crisco(R) All-Vegetable Shortening
- 3 tablespoons Crisco Pure Vegetable Oil
- 15 ounces seasoned black beans heated according to label instructions
- 1 cup queso fresco crumbled
- HEAT oven to 300u0b0F. Combine flour, mozzarella cheese, sugar and salt in large bowl. Microwave milk and shortening in medium microwave-safe bowl on HIGH 2 minutes or until mixture just begins to boil. Stir into flour mixture until blended. Knead on lightly floured surface until dough is smooth, about 2 minutes. Shape dough into 10 (2 1/2-inch) patties.
- HEAT oil in large nonstick skillet over medium-low heat. Cook arepas in batches, 4 to 5 minutes on each side, until crispy and golden brown. Place on ungreased baking sheet. Bake 10 minutes. Split in half horizontally. Fill with black beans and queso fresco.
