Apricot Crumble Squares
- 5 1/4 cups flour
- 1 1/2 cups oats
- 1 1/2 cups sugar
- 2 teaspoons vanilla extract
- 1/4 pound chopped hazelnuts
- 2 egg yolks medium
- 1 2/3 cups butter cubed
- 3 tablespoons bread crumbs
- 14 ounces apricots drained and sliced
- 3 tablespoons apricot jam
- 3 tablespoons powdered sugar for dusting
- Preheat oven to 400u0b0F. To make the pastry base, mix together the flour, oats, sugar, vanilla, nuts, egg yolks, butter, 3-4 tbsp cold water and a pinch of salt in a large bowl. Rub in the butter with your hands until the mixture resembles crumbs. Line a 13 x 15 inch baking sheet with parchment paper and spread 2/3 of the pastry mixture onto it, pressing it in to make a smooth base. Sprinkle with breadcrumbs.
- To make the filling, mix the apricots with the jam.
- To assemble, spread the apricot mixture on the pastry base and top with the remaining pastry mixture. Bake for 45-50 minutes on the bottom rack of the oven, then remove and cool on a wire rack. To serve, dust with powdered sugar and cut into squares.
