French Chicken

  1. Season the chicken with salt and pepper.
  2. Heat oil in a frying pan and cook chicken on both sides until golden.
  3. Remove from pan and set aside on a plate lined with paper towels to absorb excess grease.
  4. In the same frying pan, saute sausages - sliced in 3 pieces lengthwise - and set aside.
  5. Toast bread slices.
  6. For the bechamel sauce, melt margarine in a saucepan, add flour, mix and brown lightly.
  7. With a whisk, stir in milk and bring mixture to a boil, stirring constantly.
  8. Once the sauce begins to thicken, remove from heat and season with salt and pepper.
  9. Stir in ketchup, mix well and set aside.
  10. Arrange the layers as follows: bread, chicken, sausage, bread, chorizo, ham, bread.
  11. Cover all the layers with the slices of cheese, including the sides. Drizzle with bechamel sauce.
  12. Briefly heat in microwave or preheated oven broiler to melt the cheese.
  13. Sprinkle with dried oregano.
  14. Serve warm.
