Hominy Stew
- 1 1/2 lb. beef stew, cut in 1/2 inch pieces
- 4 c. water
- 1/2 c. chopped onion
- 1 clove garlic, minced
- 1/2 Tbsp. ground cumin
- 1 1/2 tsp. salt
- 2 15 oz. cans hominy, drained
- 1 10 oz. can tomatoes with green chilies
- 1/2 c. cold water
- 1/4 c. all-purpose flour
- shredded cabbage
- sliced green onions
- In 3 qt. saucepan combine beef, the 4 cups water, onion, garlic and salt. Cover simmer 1 1/2 hours; add hominy, undrained tomatoes with chilies and cumin.
- Cover and simmer 30 minutes more. Blend the 1/2 c. cold water into flour, add to beef mixture; cook and stir till thickened and bubbly.
- Serve in bowls; top with shredded cabbage and green onions, if desired.
- Makes 6 - 8 servings.
