Pretzel Pork And Chive Dumpling

  1. 1. Mix ground pork and ground fat back. Add Chinese chives, salt, sugar, white pepper and sesame oil mix thoroughly.
  2. 2. Take filling and place in wonton wrapper and seal with a little water on the edges.
  3. 3. Reserve for service.
  4. 1. Combine water and mustard powder, mix well and bloom overnight.
  5. 2. When mustard is ready, combine all other ingredients and whisk until smooth.
  6. 1. Heat oven to 400 degrees.
  7. 2. Make baking soda and water solution, bring to boil.
  8. 3. To serve, blanch the dumplings in the water solution for 1 minute.
  9. 4. Remove from solution and brush with drawn butter. Sprinkle with pretzel salt.
  10. 5. Pan fry, potsticker style, lightly browning each side in hot saute pan.
  11. 6. Place in oven for 4-5 minutes.
  12. 7. Serve with mustard
