Halibut In White Wine And Basil Broth
- 4 ounces halibut fillets or other firm white fish
- 1/4 cup dry white wine
- 1/4 cup chicken stock
- 1 clove garlic sliced thinly
- 2 cups baby spinach
- 1 cup cherry tomatoes sliced in half
- 1/2 cup fresh basil leaves
- 1 tablespoon olive oil
- salt
- pepper
- A fast, healthy, and delicious meal. Serve with lots of italian bread for soaking up the sauce, and drink the rest of the wine!
- 1. Pat the halibut fillets dry and season each side with salt and pepper.
- 2. Heat the olive oil in a non stick pan on med-high heat. Add the halibut fillets and sear on both sides (about 2 min/side).
- 3. Add sliced garlic and sautee for 30 seconds until the garlic becomes fragrant.
- 4. Add white wine and then chicken stock. Boil for 2-3 minutes.
- 5. Add cherry tomatoes, baby spinach, and basil leaves. Cook just until spinach is wilted. Scoop into shallow bowls along with broth. Serve immediately with bread for dipping.
