Halibut In White Wine And Basil Broth

  1. A fast, healthy, and delicious meal. Serve with lots of italian bread for soaking up the sauce, and drink the rest of the wine!
  2. 1. Pat the halibut fillets dry and season each side with salt and pepper.
  3. 2. Heat the olive oil in a non stick pan on med-high heat. Add the halibut fillets and sear on both sides (about 2 min/side).
  4. 3. Add sliced garlic and sautee for 30 seconds until the garlic becomes fragrant.
  5. 4. Add white wine and then chicken stock. Boil for 2-3 minutes.
  6. 5. Add cherry tomatoes, baby spinach, and basil leaves. Cook just until spinach is wilted. Scoop into shallow bowls along with broth. Serve immediately with bread for dipping.
