Sweet Thai Pork

  1. Chop the pork ribs into bite-size pieces, or dice the pork loin.
  2. In a wok, add the sugar with 2 tbsp. water and heat gently until dissolved.
  3. Once dissolved, heat vigorously until the sugar caramelizes.
  4. Add the meat, shallots, fish sauce, soy sauce, pepper, and 250 ml lukewarm water. Stir well and cover.
  5. Cook for 10 minutes on a low heat, stirring from time to time.
  6. Remove the lid and cook for a further 20-30 minutes, stirring frequently, until the sauce thickens. Add more water as necessary.
  7. Garnish with coriander and serve with rice and vegetables.
