Sweet Thai Pork
- 1 7/8 pounds pork ribs
- pork loin
- 7/8 cup brown sugar
- 4 shallots finely sliced in rings
- 1 tablespoon fish sauce
- 2 tablespoons sweet soy sauce kecap manis
- 1 teaspoon ground black pepper freshly
- coriander leaves for garnish
- Chop the pork ribs into bite-size pieces, or dice the pork loin.
- In a wok, add the sugar with 2 tbsp. water and heat gently until dissolved.
- Once dissolved, heat vigorously until the sugar caramelizes.
- Add the meat, shallots, fish sauce, soy sauce, pepper, and 250 ml lukewarm water. Stir well and cover.
- Cook for 10 minutes on a low heat, stirring from time to time.
- Remove the lid and cook for a further 20-30 minutes, stirring frequently, until the sauce thickens. Add more water as necessary.
- Garnish with coriander and serve with rice and vegetables.
