Roast Pork With Sweet Potato And Apples

  1. Preheat oven to 240 degrees Cneel sweet potatoes and cut them in to bite sized pieces.nlice onions and 3 apples in to wedges.
  2. Slice and peel 1 apple in thin slices. Cut small slices on the top of the pork loin and stuff the apple slices in the pork. Spread about 1 tablespoon of french mustard on top of the pork. Place the pork loin in the center of a large roasting tray.
  3. In a bowl, mix brown sugar, garlic powder, onion powder, paprika powder, thyme and 1 tablespoon of salt. Sprinkle this mixture evenly over the pork loin. Roast for about 15 mins.
  4. In a large bowl, toss the apples, sweet potato and onion in olive oil and season with salt. Add to the roasting tray with the pork and return to the oven until the sweet potato is cooked and a thermometer inserted in the center of the pork reads 70 degrees C, about 30 mins
  5. Allow the pork to rest for 10 mins before slicing. You can serve this with apple sauce like i did but the apples will break down when cooking and act as apple sauce anyway.
