Turkey Sandwiches With Cranberry Relish
- 1 package Shady Brook Farms Turkey Breast Cutlets
- 1 tablespoon olive oil
- 1 orange medium, seeded and quartered, or 1 can, 11 ounce mandarin oranges, drained
- 16 ounces whole berry cranberry sauce
- 6 ounces dried apricots chopped
- 2 tablespoons sugar
- 1/3 cup pecans finely chopped
- 1/2 cup whipped cream cheese plain
- 4 buns wheat
- 4 leaves lettuce green
- Heat oil in a large nonstick skillet over medium-high heat.
- Cook turkey for 5 minutes on each side or until no longer pink and internal temperature reaches 170u0b0F.
- In a medium bowl, mix oranges, cranberry sauce, apricots, sugar and pecans.
- Spread cream cheese on bottom of buns.
- Layer on lettuce, turkey and cranberry mixture.
- Top with remaining bun.
