Maple - Candied Arctic Char

  1. Heat oven to 275u0b0F.
  2. In a food processor, combine maple syrup, honey, garlic, ginger, salt, liquid Smoke and olive oil until well combined.
  3. Grease a shallow, glass baking dish with butter
  4. Place char strips in dish,
  5. Pour the sauce over the fillets, completely covering them.
  6. Sprinkle cracked peppercorns and the brown sugar on top to cover all the fish
  7. Bake 30 minutes, or until the sugar has caramelized.
