Fish Burgers
- 1 pound white fish fillets boneless skinless, coarsely chopped
- 1 tablespoon chopped cilantro or parsley
- 2 teaspoons grated lemon peel
- 4 new potatoes sliced
- 1/4 cup mayonnaise
- 2 teaspoons chives chopped
- 4 bread rolls split
- salad greens to serve
- Preheat the oven to 400u0b0F. Lightly grease and line a baking pan with parchment paper.
- Process fish, cilantro and lemon peel in a food processor until a coarse paste forms. Shape into 4 patties. Refrigerate.
- Meanwhile, place sliced potatoes on prepared pan. Lightly spray with no stick cooking spray. Season to taste. Bake for 20 mins, turning halfway through cooking, until golden.
- Heat oil in a large skillet on low heat. Cook patties for 3-5 mins each side or until cooked through.
- Combine mayonnaise and chives. Spread on bottom of each roll. Layer with lettuce leaves, fish burgers, potato slices and roll tops.
