Raspberry Honey Drizzle Cornmeal Pancakes
- 1/4 cup vegetable oil
- 1/2 teaspoon baking soda
- 1 teaspoon sea salt
- 1 tablespoon baking powder
- 1 cup whole wheat flour
- 2 large eggs
- 1 1/4 cups almond milk or milk of choice
- 3/4 cup cornmeal Fine Grind, I use Bob's Red Mill Natural Foods brand
- 1 cup water boiling hot
- 1/4 cup raspberries
- 1 tablespoon unsweetened shredded coconut
- 1 tablespoon honey
- strawberries Extra, to top and honey for drizzling
- stevia to taste
- Mix all dry ingredients in a bowl
- Slowly add in eggs, milk, and blend with electric mixture until smooth
- Pour 1/4 cup batter into greased pan
- Cook on each side for about 3-4 minutes each
- Stack tall, drizzle honey, and enjoy!
