The Absolute Best Christmas Ginger Cookie
- 2 1/2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1 cup brown sugar packed
- 3/4 cup canola oil
- 1 cup molasses
- 1 egg
- 1/2 cup sugar gold decorative sugar makes the best presentation
- Combine brown sugar, oil, molasses, and egg with a beater and blend about one minute.
- Add dry ingredients (excluding decorative sugar) and beat until blended well.
- Pinch out dough and roll into balls about one inch in diameter.
- Roll in sugar and place on cookie sheet sprayed with cooking spray.
- Smash down gently (and just slightly) with the bottom of a glass.
- Bake in 375 degree oven for exactly 8 minutes.
- After cooling about five minutes, remove with spatula and cool completely on cooling rack.
