Swiss-Style Pita
- 2 whole pita breads grain
- 1 1/8 cups cooked chicken or roasted, shredded
- 5 2/3 tablespoons cheese panela, grated, may substitute a mild cheddar
- 7 1/8 tablespoons mozzarella cheese shredded
- 8 tomatillos
- 1 clove garlic
- 4 sprigs cilantro
- salt and ground black pepper
- Boil the tomatoes until soft. Puree in the blender along with the garlic, cilantro, salt, and pepper.
- Pour the puree into a pan and allow to come to a slight boil. Set aside.
- Mix the chicken with the panela cheese.
- Separate each pita pocket into two thin slices of bread and place the chicken and cheese mixture onto each side. Place onto a baking dish.
- Pour the puree over the pita slices and sprinkle with mozzarella cheese. Broil until the cheese is melted and begins to brown.
