Shredded Chicken Sandwiches With Honey Dijon Slaw
- 1/4 cup mayonnaise
- 2 teaspoons honey
- 2 teaspoons dijon mustard
- 1/4 teaspoon garlic powder
- 1/4 wedge red cabbage about 1 1/2 cups shredded
- 1/4 wedge green cabbage about 1 1/2 cups shredded
- 2 cooked chicken breasts pre-
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/4 teaspoon freshly ground black pepper
- 4 brioche buns
- Whisk together mayonnaise, honey, Dijon mustard and garlic powder.
- Attach the KitchenAid(R) Food Processor Attachment with a slicing disc inserted to a KitchenAid(R) Stand Mixer.
- Turn the ExactSliceTM System to thin. Place a bowl under the food processor to catch the cabbage. Place cabbage in the feeder and push the cabbage through to slice.
- Toss the cabbage with the mayonnaise. Cover and refrigerate while you prepare the sandwiches. Using the slicing blade again, slice the chicken.
- Heat oil in a skillet over medium heat. Cook chicken just until warmed through, pour lemon juice over the top and sprinkle with pepper. Mix well.
- To assemble the sandwiches, spoon 1/2 cup of chicken onto the bottom bun, spoon slaw over chicken and top with top half of bun. Serve.
