Salmon, Leek And Zuchinni Crumble
- 3 3/8 cups leeks
- 1 5/8 cups zucchini
- 2 1/8 tablespoons butter
- 4 7/16 tablespoons heavy cream
- 1 1/8 pounds fresh salmon
- 1 cup flour
- 1 1/4 cups grated Parmesan cheese
- 5 5/8 tablespoons butter cold
- 7 ounces smoked salmon
- Preheat oven to 160 degrees Celsius.
- Finely chop the leeks and cut the zucchini into thin strips.
- In a sauteing pan, melt the butter and brown the vegetables over low heat for 5 minutes, season with salt and pepper.
- Add the cream, stir and cook for 3 minutes.
- Cut the fresh salmon into small pieces.
- In a bowl, with your hands or a pastry cutter, mix the flour, Parmesan and butter until crumbly.
- In a baking dish arrange a layer of vegetables and top with the fresh salmon and smoked salmon.
- Top with the crumble.
- Bake for about 30 minutes, until golden brown.
