Quick Chicken Fried Rice

  1. Cook rice according to package directions.
  2. While rice is cooking, prepare Grilled & Ready(R) chicken breast strips according to skillet package directions. Remove from pan and keep warm.
  3. In same skillet, add vegetable oil and cook onions, green peppers and carrots for 1-2 minutes, or until crisp-tender. Add garlic and ginger; cook and stir 30 seconds longer. Stir in rice and soy sauce; reduce heat to medium. Add egg substitute and cook, stirring occasionally, until set.
  4. Return chicken to skillet and cook just until heated through. Refrigerate leftovers immediately.
