Fajitas With Guacamole And Salsa
- 3 cloves garlic crushed
- 1/4 cup lemon juice
- 2 teaspoons ground cumin
- 1 tablespoon olive oil
- 1 1/4 pounds lamb strips
- 1 red pepper large, sliced thickly
- 1 green pepper large, sliced thickly
- 1 yellow pepper medium, sliced thickly
- 1 red onion large, sliced thickly
- 8 large flour tortillas
- guacamole
- 1 avocado large
- 3 tablespoons chopped fresh cilantro finely
- 1 tablespoon lime juice
- 1 white onion small, chopped finely
- 1 salsa
- 2 medium tomatoes seeded, chopped finely
- 1 red chili fresh long, chopped finely
- 5 tablespoons chopped fresh cilantro coarsely
- 1 clove garlic crushed
- 2 tablespoons lime juice
- Combine garlic, juice, cumin and oil in large bowl and add lamb, stir to coat in mixture. Cover and refrigerate.
- To make guacamole, coarsely chop avocado over small bowl and add remaining ingredients, stir gently to combine.
- To make salsa, combine ingredients in small bowl.
- Cook lamb, in batches, in heated oiled frying pan, stirring, until browned all over and cooked as desired. Cover to keep warm. Cook peppers and onion, in batches, in same pan, stirring, until just softened.
- Meanwhile, heat tortillas according to instructions on packet.
- Return lamb and pepper mixture to pan and stir gently over medium heat until hot. Divide fajita mixture among serving plates and serve with tortillas, guacamole and salsa.
