Lomo Saltado
- 1 tomato ; deseeded and cut into quarters
- 1 red capsicum ; chopped
- 1 red onion ; thinly sliced
- 1 tablespoon parsley
- 1 tablespoon corriander
- 500 grams beef diced casserole
- 1 garlic clove
- 1 dash olive oil
- 2 pinches salt
- 1 pinch pepper
- 2 tablespoons soya sauce
- 1 tablespoon sesame oil
- 1 teaspoon cummin
- 1 tablespoon ginger
- 2 blue potatoes royal, ; cut into strips
- 1 1/2 tablespoons white vinegar
- 2 1/2 tablespoons vinegar brown
- 1 1/2 cups jasmine rice
- 2 1/2 cups water
- canola oil ; for deep frying
- Marinate beef in the morning by adding dash of pepper, 1 tbsp soya sauce, pinch of salt, 1 tsp cummin, 1 tbsp ginger grated. Mix together with diced beef and cover bowl while put aside in the fridge for at least a couple of hours.
- Add dash of olive into rice cooker. Add minced garlic clove, pinch of salt, 2 1/2 cups water and 1 1/2 cups jasmine rice and cook accordingly until ready and set aside.
- Put 1 tbsp sesame oil into wok and add marinated beef until browned.
- Put enough canola oil to cover chips in the deep fryer. Add 2 blue royal potatoes cut into strips and deep fry until golden in colour..
- Add tomato; deseeded and cut into quarters into wok with beef, and red capsicum chopped. Add 1 1/2 tbsp white vinegar, 2 1/2 tbsp brown vinegar, pinch of salt, and 1 tbsp soya sauce. Add 1 sliced red onion and cook for a couple of mins.
- Drain chips of excess oil when cooked and add to wok with 1 tbsp corriander, 1 tbsp parsley. Stir until just combined and serve with rice.
