Meat Rolls
- 1 1/2 lb. beef or veal round, sliced 1/4-inch thick
- choice of stuffing (whatever your family prefers)
- 1/4 c. enriched flour
- 1/4 c. Fluffo
- 2 onions, sliced
- 1 carrot, sliced
- 2 tsp. chopped parsley
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. thyme
- 1 bay leaf
- 2 tomatoes, chopped or 1 c. canned tomatoes
- 1 c. stock or wine
- Cut meat into 3 or 4-inch squares.
- Place desired filling in center of each piece.
- Roll the meat and tie with string.
- Dip rolls in flour.
- Heat Fluffo in skillet or Dutch oven and in it brown the rolls on all sides.
- Add remaining ingredients except parsley.
- Cover and simmer 45 minutes or until meat is tender. Remove rolls to serving dish and strain gravy over them.
- Sprinkle with parsley. If desired, stir 1/4 cup of cream into gravy.
